I adapted this recipe from a book of family recipes given to me by my mother-in-law.
Waffles
2 cups of flour
1 T. baking powder
1 t. baking soda
1 t. salt
2 cups buttermilk
4 eggs, separated
1 cup of butter, melted
1/4 cup of sugar, approximately (you can use a little less, more or none at all)
1/4 or 1/2 t. vanilla extract
In a large bowl, whisk the egg yolks. Whisk in the buttermilk, butter and vanilla. Combine the flour, baking powder, baking soda, salt and sugar. Add the flour mixture to the yolk mixture and whisk until smooth.
In a small bowl, beat the egg whites until stiff peaks form. Then fold egg whites into the batter.
Top with anything you like or add any fruit to the batter.
